Pullulan can be melt processed by conventional melt-processing methods with the addition of a plasticizer. Plasticizers such as glycerol and ethylene glycol have been shown to reduce the glass transition temperature to below 160°C with the addition of more than 10% plasticizer. Modification of pullulan has also been accomplished by acetylation .
Chitin and Chitosan Chitin is a naturally occurring polysaccharide derived primarily from the exoskeleton of shellfish and is described as ¡ -1,4-linked 2-acetamido-2-deoxy-D-glucose. Chitin is also found in insects and filamentous fungi [38, 39]. Chitin has been shown to be readily biodegraded by microorganisms producing chitinases and lysozyme and is subsequently mineralized [40, 41]. Due to the intermolecular hydrogen bonding, chitin is insoluble in water and is not melt processable:
